We haven’t eaten much tilapia lately, but fish sounded good and Rachel was headed out with a friend anyway, so I figured Addie and I could play around with some cheap fillets. I coated them in a sauce of crushed garlic, plain yogurt and curry. I think I crushed some cumin seeds in there too, but my memory is a little foggy now. I should really start trying to post these things after I cook them instead of a week or two later. oops. oh well. The sauce was really yummy and I sprinkled some cornmeal over that for that nice browned finish. I pan fried and unfortunately undercooked them a bit at first. I should have planned on pan roasting a bit too I suppose. Served with a bit of fresh mint on top for a nice fresh bite.
